2nd day: Hello Kitty-Fried Chicken Bento

For my 2nd day of Bento Meal Preparation, I decided to make a Hello Kitty-inspired meal to match their Hello Kitty lunch kits! 

And for my 2nd day, I am so happy that I was able to put a little more detail on my hello kitty rice mould! For Renee Joy, I used cheese for the detailing as she really loves cheese while I used chicken hotdog for  the details on Reena Joy's bento meal as she's not that crazy about cheese compared to her big sister. :)

First Time to Bento!




Yay! Finally, I was able to somehow squeeze a little of my very hectic schedule into bento-making!

I have been purchasing bento tools whenever I chance upon them in supermarkets, department store, crafts stores, etc, hoping that someday, I will finally find the time to prepare bento meals for my two daughters.

And yes, finally, last Monday, August 22, 2016, I have finally made my first bento meal! Tsaraaan!

And although my first creation was not really that good yet (well, really far from what I hoped to be!), I was still happy that these meals were able to put a smile on my daughters' faces!

Survived the third day of Bento-making! Yay!

I just can't help smiling whenever I remember how excited my daughter Yna was in showing her baon to her classmates. This really motivates me to do better next time! :) Aja!

Cupcake Baking and Decorating Class at The Maya Kitchen

My future Chef!

"To become a Chef." That will be one of the responses that you will get whenever you will be asking both of my daughters what they want to be when they grow up (to be an Architect for my eldest and to be a teacher for my younger child would be the other answers).

And this dream was further intensified by YouTube! They never really get tired browsing and watching cooking and baking videos/ tutorials. And ever since, they've been really trying to convince me to enroll them in a Baking Workshop. Well, wish was now finally granted (for my eldest, at least )! :)

Last May 28, 2016, in partnership with Mommy Bloggers Philippines (MBP), my eldest daughter and I, together with the other mommies and kids of MBP, got a chance to be part of The Maya Kitchen's Cupcake Baking and Decorating Class!

It is a two-hour workshop wherein all the MBP mommies and kids were able to learn some of the basic techniques of baking, while having fun of course!

We learned to bake two kinds of cupcakes - Strawberries and Cream Cupcakes and Peanut Butter and Choco Chip Cupcakes.

We worked in groups. Mommy Shari and I worked together with our kiddos.

And so the baking begins!

We started off with the Strawberries and Cream Cupcakes, followed by the Peanut Butter and Choco Chip Cupcakes.

The ingredients are all easily available in the market, so there is really nothing to worry about.

After we finished filling up all our tray, the trainees took our trays and they were the ones who placed them in the oven. So while waiting for the cupcakes to bake, Ms. Icy of The Maya Kitchen taught the kids how to do the cream.

The kids surely had fun learning how to whip the cream! :)

And at last the cupcakes were finally baked!

And the best part of the workshop?! Getting to eat the cuppies, of course! Yummmmy!



The Cupcake Baking and Decorating Class at The Maya Kitchen was really another successful event made possible by MBP! All the kids and the mommies really had a great time bonding, not only with their respective kids, but with the other mommies and kids as well! I really hope that there'll be more workshop like this in the very near future! :) Thank you so much MBP for always coming up with events that combine learning and fun at the same time!

Peanut Butter and Choco Chip Cupcakes by The Maya Kitchen


Cupcakes:
1 1/2 cups            Maya All-Purpose Flour
1 1/2 teaspoons   baking powder
1/2 teaspoon        salt
1/2 cup                butter
2/3 cup                Peanut Butter
1/2 cup                white sugar
1/2 cup                brown sugar, packed
2                          eggs
1/2 cup                milk
1/2 cup                semi-sweetened chocolate chip

Chocolate Butter Cream:
1/2 cup                butter
2 cups                 powdered sugar
1/2 cup                cocoa powder
1/4 cup                milk
3 tablespoons       whipping cream

Procedure:
      Prepare cupcakes. Preheat oven to 350F177C. Line two 3 oz. 12-hole muffin pan with cupcake liners. Set aside.

     In a bowl, combine flour and baking powder and salt. Set aside. In another bowl, cream butter, peanut butter, white sugar and brown sugar until fluffy. Add eggs and beat well. Alternately add the dry ingredients and milk, ending with the dry mixture and beating well after each addition. Pour batter into the prepared pans until 3/4 full. Bake for 25 mins or until done. Cool completely before frosting.

     Prepare chocolate butter cream. Using a mixer, beat the butter until light and fluffy. Gradually add sugar and cocoa powder at low speed. Add milk and beat at medium speed. Lastly, add the whipping cream and beat until light and fluffy. Pipe or spread on top of cool cupcakes.

Yield: 14 to 15 cupcakes


Strawberries and Cream Cupcakes by The Maya Kitchen


Cupcakes:
1 1/4 cups            Maya All-Purpose Flour
1/2 teaspoon        baking soda
1/4 cup                butter
1/4 cup                sugar
1                         egg
1/4 cup                milk
1/2 cup                strawberry jam
1 1/2 teaspoons   lemon juice

Strawberry Whipped Cream:
1/3 cup                strawberry jam
1 cup                   whipping cream
                           strawberry jam, as needed for filling


Procedure:
      Prepare cupcakes. Preheat oven to 350F177C. Line a 3 oz. 12-hole muffin pan with cupcake liners. Set aside.

     In a bowl, combine flour and baking soda. Set aside. In another bowl, cream butter and sugar until fluffy. Add egg and beat well. Add the dry ingredients and milk. Blend well. Stir in strawberry jam and lemon juice and mix until well combined. Pour batter into the prepared pan, up to 2/3 full. Bake for 20 mins or until don. Allow to cool.

     Prepare whipped cream.Stir strawberry jam to soften. In a mixer bowl, beat whipping cream until stiff. Fold in strawberry jam.

     To assemble, make a small hole at the center of the cupcakes and fill with strawberry jam. Pipe strawberry whipped cream on top.

Yield: 10 cupcakes
